Which train is dictated by which towns you will travel between, so do not worry about the names nor the companies, just concentrate on which places you want to see. For a three week travel I would say, pick 3 places you want to see most and then look for one or two near each to see too. That way you will not spend all your time and money on traveling, you will be able to remember what you have seen and get a good impression of the continent, rather than being tired all the time, which you would be if you would just race from town to town. Almost all towns, cities and even villages in Europe are historical, so trying to use that as selection tool is impossible. When you know where you want to go, you come back here and we will help you with practical points. If you want to see more than one town in those 3 weeks, do not rent apartments or houses, stay in hostels (cheaper option) or hotels. A journey can be London, Dover, ferry to France, Calais, Paris, Lyon, Venice, some small towns in Italy and Rome. For a travel like that you can buy a single train ticket, valid for 2 months, not for high speed trains. Or you can buy point to point tickets between each set of towns, opting for a fast train for part of the way, saving on time, but spending more money for your travel. If you want to see parts of Europe that are far apart from each other you might fly between some of the towns. And if you want to see very many places, doing all of Europe on a fast pace, you can book a tour, they will take care of all things, you just show up and enjoy. Might be your way of travel, it is not mine. 3 weeks is not a lot to see Europe.
